Friiiiiday the thirteenth

We had snow flurries last night. Nothing major because we never get anything major. Except last years fluke. This morning I kept hitting snooze on my alarm but my tv was turned on and down low. I could hear the local news broadcast. They were talking about ice and school closings. Ended up being bullshit and totally nothing on the roads hmph. Anyway. I managed to leave for work on time, if not a few minutes earlier than the rest of the week.

Got into town and there was a tree across a major road. Why? IDK. There wasn't heavy ice. I had to detour through a sketch neighborhood and take an unfamiliar path. Fun times! I'm not really a believer in Friday the 13th but this day definitely started off funky. (And yes, I was late for work).

Last night I roasted some asparagus and sweet peppers to go along with pesto chicken. Just some kosher salt, fresh cracked black peppers, granulated garlic and extra virgin olive oil. Roasted it for about ten minutes in a 400 degree oven. I wanted to hoard the enter pan for myself. The peppers are already sweet but roasting them makes them even more so. Amazing.


In the end I shared. But I didn't wanna. 

Also, I made this treat for lunch today. A "Flat Out" wrap with pesto chicken sliced up, roasted asparagus and sweet peppers, some avocado, and feta cheese crumbles. 

Added in sweet potato chips and a yogurt that expired on Jan 3rd. The apple is for this afternoon. I'm pretty sure I want to make out with every lunch I've had this week. I'm sorry (not really) it's all I've been blogging about.

I threw together another smoothie and panini last night, for today. Breakfast was a green monster which had an odd after taste when I sampled last night. This morning it was much improved, thank goodness.

1 cup of filtered water
1 cup of low acid orange juice
handful of fresh spinach
half of an avocado
1 smallish Golden Delicious apple
2 smallish bananas
some fresh strawberries
a single serving container of Fage Greek yogurt
about 1/3 cup of raw oatmeal (not quick cook)
a scoop of ground flax seed
the kitchen sink





Ciabatta roll, hollowed out (no bread guts)
a thin smear of pesto (store bought)
four raw asparagus spears cut in half)
1 yellow sweet pepper sliced into fours
some roasted red peppers
feta crumbles on top
throw it in the George Foreman grill (panini press)
VOILA

Paninigasm


I am so enraptured by my lunch today I couldn't figure out why blogger wouldn't log in. Took me five minutes to realize I was spelling my email address wrong.

Last night I threw together a panini using the George Foreman grill that sits in our cabinet, untouched normally.

I hollowed out a whole wheat ciabatta roll and tossed the extra bread guts (technical term) in the trash. A little smear of (store bought) sun-dried tomato pesto, some fresh mozzarella, a few slices of rotisserie chicken leftover from Sunday dinner. Squished it in the GF grill and VOILA. Orgasm in my mouth. You're welcome.
